Two Cuban-style rums shaken with passion fruit, pineapple, lime, amaretto and hazelnut: long tiki, nutty, a thread of smoke. Pebble ice, not a dry coupe.

Ingredients

• Gold rum — 30 ml
• Dark rum — 30 ml
• Amaretto — 15 ml
• Frangelico — 5 ml
• Maraschino liqueur — 5 drops
• Passion fruit puree — 30 ml
• Pineapple juice — 90 ml
• Lime juice — 30 ml
• Ginger — 1 slice
• Orange — 1 slice
• Pineapple — 1 slice

Preparation

1. Muddle a thin slice of ginger in a shaker.
2. Add both rums, amaretto, Frangelico, maraschino drops, passion-fruit puree, pineapple juice, and lime juice.
3. Shake vigorously with ice.
4. Strain into a chilled tiki or highball glass filled with pebble ice.
5. Garnish with citrus and a pineapple slice.
