Scotch smoke and absinthe rise through a bright lemon-lime fizz with a velvety egg-white head. Long and refreshing, but the whiskey remains unmistakably present.

Ingredients

• Blended Scotch — 60 ml
• Absinthe — 3 dash
• Lemon juice — 15 ml
• Lime juice — 15 ml
• Simple syrup — 15 ml
• Egg white — 1 piece
• Soda water — 60 ml
• Orange peel — 1 piece

Preparation

1. Dry-shake Scotch, absinthe, both juices, syrup and egg white without ice.
2. Add ice and shake again until cold.
3. Strain into an ice-free highball glass.
4. Gently top with chilled soda water and garnish with an orange twist.
