Jeff Berry's homage to Coleridge: dark rum, grapefruit and lime with allspice dram and Demerara sweetness. Bitter citrus, molasses, clove on the finish.

Ingredients

• Dark rum — 30 ml
• Lime juice — 22.5 ml
• Grapefruit juice — 22.5 ml
• Allspice liqueur — 7.5 ml
• Demerara sugar — 7.5 ml
• Lime — 1 wheel

Preparation

1. Add dark rum, lime juice, grapefruit juice, allspice liqueur and Demerara syrup to a shaker with ice.
2. Shake until well chilled.
3. Fine-strain into a chilled cocktail glass.
4. Garnish with a lime wheel.
