Overproof Demerara swizzled with lime, syrup, mint and Angostura in a Collins glass. Trinidad fire cooled by crushed ice and swizzle-stick ceremony.

Ingredients
- 151-proof rum — 30 ml
- Lime juice — 30 ml
- Simple syrup — 15 ml
- Angostura bitters — 2 dash
- Mint — 8 leaves
- Mint — 1 sprig
Preparation
- Add mint leaves to a Collins glass over crushed ice.
- Swizzle briefly to bruise mint.
- Add 151-proof rum, lime juice and simple syrup.
- Swizzle until the glass frosts over crushed ice visible.
- Dash Angostura on top and garnish with a mint sprig.
