Ingredients

• Gin — 60 ml
• Lemon juice — 30 ml
• Simple syrup — 20 ml
• Egg white — 20 ml
• Soda water — 60 ml
• Lemon — 1 wheel

Preparation

1. Dry-shake gin, lemon juice, syrup and egg white without ice.
2. Add ice and shake again until well chilled.
3. Strain into an ice-free highball glass.
4. Top with chilled soda water and garnish with a lemon wheel on the rim.
