Ingredients

• Aperol — 60 ml
• Lemon juice — 22 ml
• Simple syrup — 15 ml
• Egg white — 30 ml
• Grapefruit peel — 1 piece

Preparation

1. Add Aperol, lemon juice, simple syrup and egg white to a shaker.
2. Dry-shake to emulsify.
3. Add ice and shake hard, then fine-strain into a chilled coupe.
4. Express a grapefruit twist over the foam and drop it in or discard.
