Ingredients

• Rye whiskey — 45 ml
• Simple syrup — 5 ml
• Maraschino liqueur — 2 ml
• Angostura bitters — 1 dash
• Pineapple — 1 cube
• Champagne — 30 ml
• Lemon peel — 1 piece

Preparation

1. Muddle the pineapple cube in a shaker.
2. Add rye, syrup, maraschino and bitters with ice.
3. Shake until well chilled and fine-strain into a chilled cocktail glass.
4. Top with chilled champagne and garnish with a lemon twist.
