Jerry Thomas’s flaming Scotch: equal boiling water, a little sugar, lemon peel — a wineglass showpiece, not a casual toddy.

Ingredients
- Scotch — 60 ml
- Boiling water — 60 ml
- Sugar — 5 ml
- Lemon peel — 1 piece
Preparation
- Warm two metal mugs. Dissolve the sugar in the boiling water in one mug.
- Pour the Scotch into the other mug and ignite it, keeping hair, sleeves and bottles well clear.
- Pour the blazing Scotch into the water mug and back again several times, then cover to extinguish.
- Pour into a wineglass and garnish with lemon peel.
