Vodka, lemon, syrup and egg white over ice — classic sour template on a neutral base, bitters on the foam. Clean, tart, silky.

Ingredients

• Vodka — 60 ml
• Lemon juice — 22 ml
• Simple syrup — 15 ml
• Egg white — 15 ml
• Angostura Bitters — 3 drop

Preparation

1. Add vodka, lemon juice, simple syrup and egg white to a shaker without ice.
2. Dry shake hard to emulsify.
3. Add ice and shake again until cold.
4. Fine strain into an Old-fashioned glass over ice.
5. Dot Angostura on the foam.
